As caregivers, we are always looking for quick meals that can be prepared with items we have on hand. Being budget-friendly is also a consideration. Here’s an easy chicken salad recipe.
2 1/2 cups of cooked chicken – shredded or cubed
1/2 cup celery
1/4 cup chopped onion (I used green onion because I think regular is too strong for this recipe.)
2 T pickle relish
1/2 cup mayonnaise
Salt and pepper to taste
I always have frozen chicken breast on hand so I just throw some in a pan of water on the stove and cook until done. Shred or cut into cubes when cool. You could use the meat from a deli-roasted chicken, as well.
You might also add 1/4 cup of halved grapes, or roasted, chopped pecans or pineapple tidbits -whatever you have on hand.
Just throw everything in a bowl and mix. You could serve on bread, a croissant or atop salad greens. (I love Costco’s croissants and keep some in the freezer for special occasions. They stay very fresh and flaky.)
