I’ve been consuming a lot of ginger lately because I’ve had some bouts of vertigo (which usually is accompanied by nausea) and I’ve come to like it. I made some ginger ale (which was great) and now I found another way to use it! This drink is packed full of nutrients and resembles what people have nicknamed the Starbucks Medicine Ball. The real menu name for that drink is Honey Citrus Mint Tea. The version below is healthier AND has fewer carbs. And it’s delicious!!
Ingredients
- 4 lemons, chopped (you will use the skin and all)
- 1 Cara Cara orange, chopped (again, with the skin and all)
- 1 3-inch piece of ginger
- 1 or 2 small pieces of turmeric
- 1/2 cup raw honey (you can add less if you’d like)
- 1 cup coconut water
- 1 tsp ground pepper (optional; I added it because turmeric is better absorbed when consumed with pepper.)
- 1 cup of mint tea (steeped)
Instructions
- Wash all produce. I also peeled the ginger and turmeric a bit because the skins can be a bit bitter.
- Add the chopped lemons, orange, ginger, turmeric, honey, coconut water and pepper to the blend. Blend until smooth.
- Transfer the mixture into an ice cube tray and freeze it overnight.
- When you’re ready to drink it, steep some mint tea in boiling water for about 5 minutes.
- Add in 2 small or 1 large (like the large square ones) medicine ball cubes into the tea and stir until melted.
- You can add a bit more raw honey if desired. I find it plenty sweet.
- Serve immediately.
